Chef Fabiano Souza was born and raised in Búzios, influenced by the ancient quilombos and the local cultural richness. He was inspired from an early age by his mother and uncle to cook with regional ingredients, and later developed the famous Gnocchi do Presidente with Chef Nelson Ramos. For many years, he ran Bar do Zé, now a traditional spot on Orla Bardot. Today, Chef Fabiano's original style and genius command an authentic gastronomic experience at La Gare.
